The world of American independent bottlers and whiskey blenders is a still emerging trend in the greater world of all things whiskey in the United States. The primary focus in this niche category is an eclectic mix of individuals sourcing unique barrels from top craft distilleries across the country and releasing them under their label, often giving a distinct and transparent call out on the labeling to where the whiskey was sourced from.
What’s in the bottle
The whiskey being reviewed here, Two Souls Spirits 6-year Straight Rye Whiskey featuring Wollersheim Distillery, “Wisconsin Waffles,” is one of their spring 2024 releases and was sourced from Wisconsin-based Wollersheim Distillery. Distilled from a local grains mash bill of 66% rye, 22% corn, and 12% malt that was milled on-site, this straight rye whiskey was laid down in January 2018 in a pre-char toasted, char #3 barrel and bottled this past March, giving it an age statement of just over six years.
Bottled at 118.4 proof, this whiskey is priced at $84.99. It is named Wisconsin Waffles as Two Souls describes this release as offering notes of “fresh-baked peach cobbler and waffles with maple syrup, all topped with cinnamon drizzle and served on a toasted oak slab. “
