Review: Tomatin Sherry Collection The Palo Cortado Edition

Palo Cortado starts life off under a layer of flor. This is a layer of yeast that stops the sherry from oxidizing with oxygen, this produced Fino, Manzanilla, and Amontillado style sherries.

About:

The Tomatin Sherry Collection demonstrates the influence of various different sherry casks from Jerez. This 15 Year Old whisky was distilled in 2008 and matured in Palo Cortado casks before bottling at 46% ABV.
Appearance:
Bright gold, or light amber, with pronounced legs.
Nose:
Red plum, sticky dates, and ripe fig. Dark berries macerated in sugar syrup. Maple syrup and walnuts. Earthy spices, cinnamon and cloves.
Palate:
Medium to full mouthfeel. Juicy ripe fruits. Plums, dates and figs. A malt loaf character with a touch of ginger. Walnuts and milk chocolate. A little black pepper.
Finish:
Soft gingerbread with berry compote moves into dry roasted and salted nuts.
Comments:
Very tasty with a classic sherry profile.
